The excellent quality from its terroir, combined with meticulous processing,
gives “Rose Dance” a more vibrant flavor profile than a typical washed Geisha.
Before the cherries are pulped,
they undergo a 48-hour fermentation soak in mineral-rich spring water.
Afterward, they are thoroughly washed to remove any impurities and then slowly dried for 17 days on raised beds.
This process creates a delicate washed Geisha that is exceptionally clean and sweet.
