The ability to clearly experience fresh fruit flavors is the biggest highlight of this coffee.
During the tasting stages—from the aroma, to the first sip, to the aftertaste, and even in your memory after finishing—you’ll be flooded with the flavor memories of lychee jelly and muscat grape.
The blend specifically features specialty coffee beans from the Merial Estate in Indonesia.
The unique aspect of these beans lies in their processing method: Fruit Inoculation.
Ripe coffee cherries are depulped, leaving a specific amount of the mucilage layer intact.
A special yeast strain is added for the first 72-hour anaerobic fermentation.
Subsequently, the parchment is removed, and the green beans are combined with the original fermentation liquid in a GrainPro bag
for a second 8-hour anaerobic fermentation, followed by drying.
This process allows the beans to fully absorb the fresh fruit notes produced by the yeast, enhancing the flavor profile.
To create a more diverse and layered style, we’ve blended in Ethiopian specialty coffee beans, which contribute an extension of orange and tea-like notes. The result is a coffee with a distinct flavor that is instantly refreshing and unforgettably stunning.
