With today’s increasingly advanced post-harvest processing, many interesting flavors can be experienced through simple tasting alone.
Finca Milan, however, has refined its post-harvest processing to an even greater degree.

The “Melon Bloom” uses a complex nitrogen-macerated washed process, which eliminates overly heavy flavors and leaves behind the distinct character of fresh fruit.
First, the harvested cherries are rested at room temperature. This allows their internal temperature and compounds to react initially, ensuring the fruit is in its most active state for better interaction during the subsequent nitrogen fermentation.
Next, after cooling in a water tank at 8-10°C, the cherries are placed in bags for 10-12 hours. This allows the natural yeasts on the fruit to break down carbohydrates into sugars, increasing the sweetness.
The cherries are then depulped, leaving the mucilage layer intact, and undergo a 10-12 hour aerobic fermentation to allow for the full absorption of sweetness.
The main event of the fermentation follows: the beans are placed again into a special bioreactor, where a yeast culture and nitrogen are introduced for a 4-6 day fermentation. Throughout this process, temperature, pH levels, and sugar content are constantly monitored.
After drying for 15-20 days, the beans are rested in bags for another month to stabilize their flavor before being exported.
