The varietal for Dorothy is Yellow Bourbon, distinguished by the yellow color of its ripe cherries. This variety, however, has a lower yield and is more susceptible to pests. Therefore, it requires more meticulous care and is typically grown at higher altitudes to stimulate the coffee’s innate complexity and rich sweetness.
The most distinctive craft of Dorothy lies in its processing method, which involves a completely natural fermentation.
During processing, the pulp and skin of the coffee cherry are intentionally kept and placed in clean water to ferment. It utilizes the natural sweetness and microorganisms from the fresh fruit itself, without adding any catalysts, to ferment and build layers of flavor.
This allows the coffee’s own flavors to be expressed to their fullest potential and to completely infuse into the beans. The fermentation time is controlled to be between approximately 8 to 24 hours.
The aroma is full of ripe peach and pink floral notes. Upon sipping, it reveals a high level of complexity with passion fruit jam, peach, and molasses. As the temperature drops slightly, a roundness of Kyoho grapes and grape juice emerges. The overall profile is an explosion of delightful floral and fruity notes!
