Grown at a high altitude of 2300 meters, where the temperature difference between day and night can reach 13 degrees Celsius. The low temperatures slow down the trees’ growth cycle and extend the development of the coffee cherries, delaying the harvest by more than two months compared to the average.
During the day, photosynthesis generates sugars, and at night, the cool temperatures mean that respiration consumes only a tiny fraction of those sugars. This daily cycle allows the beans to accumulate an extremely high sugar content.
This makes them perfectly suited for the Red Honey process, which fully brings out their sweetness and balance.
During processing, 70-75% of the mucilage is intentionally preserved on the ripe cherries. Drying takes about two weeks. Due to the high sugar content, and to avoid the intense fermentation that can be caused by strong sun exposure, the beans are dried using ventilated indoor racks and shade methods until the moisture and fermentation levels are just right.
