\nRipe coffee cherries are depulped, leaving a specific amount of the mucilage layer intact.
\nA special yeast strain is added for the first 72-hour anaerobic fermentation.
\nSubsequently, the parchment is removed, and the green beans are combined with the original fermentation liquid in a GrainPro bag
\nfor a second 8-hour anaerobic fermentation, followed by drying.
\nThis process allows the beans to fully absorb the fresh fruit notes produced by the yeast, enhancing the flavor profile.
\nTo create a more diverse and layered style, we’ve blended in Ethiopian specialty coffee beans, which contribute an extension of orange and tea-like notes. The result is a coffee with a distinct flavor that is instantly refreshing and unforgettably stunning.
